What we served: chili, grilled cheese sandwiches, cookies and spinach salad!
McNabb & Risley’s Chili Recipe:
Ingredients:
1 lb lean ground beef, drained
1 cup sweet onion, finely chopped
1 pkg. McCormick original chili mix
1 cup celery, chopped
1 28 oz. can of crushed tomatoes
1 28 oz. tomato sauce
1 16oz. can of red chili beans in mild sauce, drained
1 16 oz. can of pinto beans, drained
1 cup water
Salt and pepper to taste
Garnish:
Shredded chedder cheese
Sour Cream
Directions:
In a large saucepan over medium heat, combine the ground beef, onion and salt and pepper to taste. Saute for 5 minutes or until beef is browned. Drain excess fat. Add tomatoes, tomato sauce, seasoning mix, celery and cup of water. Bring to a boil and then reduce heat to low. Cover and simmer for 1.5 hours, stirring occasionally. Stir in beans and heat through. Garnish with shredded Chedder cheese and garnish with a tablespoon of sour cream. Serve with fresh bread and a fresh salad!
