Shop the Village Farmer’s Market in Thiensville today and dish up something delicious for dinner tonight.
I love the concept of “farm to table homegrown produce” and there’s no better place to shop for fresh veggies than Thiensville’s Farmer’s Market in the village park. I was inspired by these colorful small tomatoes to create a salad for dinner tonight. After working all day the last thing I want to do in the summer is come home and prepare a big meal. This salad is easy to make, tastes amazing, and looks impressive enough to serve to guests.
Farm-to-Table Tomato Salad
You will need:
3 cups of multi-colored miniature tomatoes, washed, then cut in half
1/4 cup shaved imported Parmesan cheese
1/8 cup Balasamic Fig Dressing
1 scallion, minced
Salt and pepper to taste
8 to 10 leaves of fresh basil
To assemble salad:
Place cut up tomatoes in a large bowl. Add cheese, dressing and minced scallion. Salt and pepper to taste then toss gently. Pour into a shallow serving dish and garnish with fresh basil that has been cut into small ribbons.
Serve with a robust red wine and crispy garlic bread. Dinner will be served in 15 minutes and then there’s time to take a walk and enjoy the last days of Summer.
